The two Middle dialects of Equestria, Ponyvillian and Tsavintil are the most generic of the six. Specifically, Ponyvillian is known for its blandness, with no odd vowel or consonant sounds, and a general lack of strange pronunciation. "Kel en Luena, kel en luna" sounds approximately like "KEHL ehn "LOO-ehn-ah, KEHL ehn loo-ay-nah."
Appleloosan is a little different. Eh, or the E in Kel is ay, and ue becomes we. Thus, they would say "KAYL ayn LWEH-nah, KAYL ayn loo-ay-nah."
Manehattan is worse. It uses k' for an opening k (a k that begins a word), and due to its rapid-fire speech, words often blend with shorter words and conjunctions. Hence, "KHAY-ehn LOO-ehn-ah, KHAY-ehn loo-ehn-ah," is how they would say that.

PROPER NAMES -- SPECIFICALLY, WEIRD ONES.
Even though proper names as we know them do not quite exist in Equestria, there does exist a sort of naming system. A single name would simply be considered a ponies' first name by necessity. A two name pony could go one of two ways. Their second name could be a last name -- a name with no special traits -- or a family name/surname -- which is passed down to children and such. "Sparkle" for example, is the former, as nobody in Twilight's family has that last name. "Pie" on the other hand is the latter, since everybody in Pinkie's family bears the name "Pie" for a last name.
It's weird. And very obnoxious.

-Actually, it's Reiretna, not Reiretne, since Rarity is a girl, but in certain contexts where Reiretna doesn't really make sense, Reiretne can takes its place. I guess this must be one of those contexts.
- Daashe has no feminine equivalent. It's the only Equestrian name I've seen like that here -- I'm quite impressed.
- Applejack is Applejack. Seriously, short of calling her "Jacke" -- unwise -- or spelling it as "Appel" (which has the same pronunciation anyways) it's Applejack. (And actually Jacke ends in a silent e, so it's still Applejack.)
- Normally, Viotarsha would be Viotasha (VIY.oh.ta.zha), but that would cause a totally separate meaning of "Fluttershy" to arise. Viotasha would literally mean "hovershy," but the Equestrian rule of *modifying letters {such as r in Viotarsha} causes the meaning to be modified to its other. Thus, "hover" becomes "flutter" and hence "Fluttershy."
- Vinka'amena is literally the only Equestrian name I have ever seen or read in my life with an apostrophe in it.**
*The Equestrian rule of Modifying Letters says that any word with dual-meaning may have its first meaning modified to its second by a consonant which immediately follows the word in question. Due to a general lack of dual-meaning words in Equestrian, the application of the rule is not exactly common (although it's not rare either) and so it isn't very likely one will find an example of it in a book or something. I must say though, it makes for a pretty funny experience when you run across someone or something which does have an example of it.
**The Equestrian Apostrophe Rule is a fairly simple one -- when two of the same letter fall on separate syllables, they are separated in writing by an apostrophe. The apostrophe does not often appear in writing, though, as usually the double letters Equestrian so often seems to employ do not fall onto separate syllables. Vinka'amena is a particularly odd case though, since in any other circumstance it would be Vinkaamena (the double a is pronounced as one, except in Ponyville and Canterlot, so Pinkie ended up with an apostrophe that she wouldn't have if she'd been born anywhere else.)

THERE'S A DIFFERENCE BETWEEN A'S, YOU KNOW.
Much like English's concept of 'several sounds, one letter,' there's actually three different sounds represented by A in Equestrian. There's the ah, as seen in Vinka'amena or Applelusa, the uh, as in Kapitala, and the eh, as in Manihettani. These three A's also have sub-variants, like the hard ah, as in Tevilias, as opposed to soft ah in Viotarsha,

A couple of Equestrian rules for you, and then some.
Of course, there's the Equestrian rule of modifying letters and the apostrophe rule. But, there's also a couple of others.
Initial "t" is silent if followed by a consonant, unless that consonant is followed itself by an i. Tvilya does not have a silent t because of this, while Tsavintelat does, because the consonant isn't followed by i.
The i in "ia" is always a y. This modifies the clusters in Tevilias, or Kelestia, and usually overwrites the original i sound. However, in Kelestia, the i sound remains on the second to last syllable, while the y sound takes the i sound's original place in the last syllable. This makes for a strange little thing when saying Kelestia, because it is KEH.les.tee.yah, and not KEH.les.tyah, as would be the usual case.
